Healthy Hearty Burritos Recipe
- 1 pound grnd chicken
- 1 pkg. taco seasoning mix
- 2 1/2 c. pinto beans
- 4 c. water
- 1 med. onion, minced
- 1 1/2 teaspoon salt, optional
- Brown and drain grnd chicken.
- Follow taco seasoning package directions by adding taco seasoning packet plus 3/4 to 1 c. water to grnd chicken.
- Simmer 15 min.
- Set aside.
- Mix water, beans, and onions in large saucepan or possibly Dutch oven.
- Cover and heat to boiling.
- Boil 2 min.
- Remove from heat and let stand 1 hour.
- Add in just sufficient water to beans to cover.
- Heat to boiling.
- Reduce heat.
- Cover and boil gently, stirring occasionally till beans are very tender, about 1 1/2 hrs.
- Add in water during cooking if necessary.
- Mash beans, then stir in salt.
- Add in the seasoned grnd chicken and mix well.
- Place small amount of mix on flour tortilla and top with your favorite toppings!
- Roll up.
- Makes 2 large meals.
- May be frzn and easily reheated as a quick dinner another night!
