Mushroom Barley Soup
- 1 lb mushroom, sliced
- 6 tablespoons butter
- 1 cup chopped onion
- 1 clove garlic, minced
- 2 (10 3/4 ounce) cans beef broth
- 5 (10 3/4 ounce) cans water
- 3 tablespoons tomato paste
- 34 teaspoon salt
- 1 dash pepper
- 12 cup pearl barley
- 1 bay leaf
- 1 tablespoon parsley
- 1 12 cups diced carrots
- 4 tablespoons sherry wine
- Saute mushrooms with onions& garlic in butter.
- Stir in broth, water, tomato paste, salt& pepper.
- Stir in barley.
- Simmer 1 hour.
- Add remaining ingredients& cook 1 hour more.
- Add sherry last.
