Hot Spinach Dip
- 1 c. half and half
- 3 Tbsp. butter or margarine
- 3 Tbsp. flour
- 3/4 tsp. Tabasco sauce
- 1/3 c. grated Parmesan cheese
- 1/8 tsp. salt or to taste
- 1/4 tsp. black pepper
- 1 (10 oz.) pkg. frozen spinach, thawed and squeezed
- 2 oz. Cheddar cheese, shredded
- 2 oz. Mozzarella cheese, shredded
- tortilla chips
- sour cream
- salsa
- Preheat oven to 325u0b0.
- In small saucepan over medium heat, bring half and half to a simmer.
- In another saucepan, melt butter and add flour to make a paste; cook 1 minute.
- Add flour mixture to half and half.
- Whisk constantly until thickened, 1 to 2 minutes.
- Remove and add Tabasco, Parmesan, salt and pepper.
- Cool to room temperature.
- (At this point, the sauce can be refrigerated for 2 days.) Stir in spinach.
- Can add more Tabasco, salt and pepper.
- Spread in 9-inch pie pan or individual casserole dishes.
- Top with cheeses.
- Bake about 15 minutes.
- Serve with chips with sour cream and salsa on the side.
