Cashew-Coconut Brittle

  1. Preheat oven to 200F.
  2. Generously grease two baking sheets with butter.
  3. Place in oven, then turn off oven, keeping baking sheets warm.
  4. In a large heavy saucepan combine sugar, corn syrup, water, and salt.
  5. Bring mixture to boiling; add butter.
  6. Clip a candy thermometer to side of pan.
  7. Cook, stirring frequently, until mixture reaches 250F.
  8. Stir in cashews.
  9. Cook, stirring constantly, until mixture reaches 305F.
  10. Remove pan from heat; remove thermometer.
  11. Quickly stir in baking soda and vanilla.
  12. Stir in coconut.
  13. Spread mixture in a thin layer on each warm baking sheet.
  14. Cool.
  15. Break into bite-size pieces.
