Apple And Cabbage Soup Recipe
- 1/2 lrg White cabbage, shredded
- 3 med Onion
- 1 clv garlic, crushed
- 4 lrg Green apples
- 1/4 c. Butter
- 3 pt Chicken stock or possibly vegetable stock
- 1 x salt & freshly grnd black pepper
- 1 tsp Sugar
- 1 Tbsp. Fresh ginger, grated
- Finely shred the cabbage and slice the onions.
- Peel and core the apples and cut into even-sized pcs.
- Heat the butter in a heavy-buttomed pan, taking care not to let it brown.
- Add in the cabbage, onions and apples, and sweat over low heat, tossing the pan frequently.
- Add in the garlic and cover with the cool stock.
- Simmer till the cabbage is just tender.
- Blend in a blender till smooth.
- Season with salt, pepper and sugar.
- Reheat the soup and serve with a little minced green ginger in each bowl.
- Makes 4 to 5 servings.
