Applesauce Oatmeal Bread
- 1 c. granulated sugar
- 2 eggs
- 1/2 c. vegetable oil
- 1 1/2 tsp. vanilla
- 1/2 c. white wheat flour
- 1 c. unbleached all-purpose flour
- 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 c. oat flakes (rolled oats)
- 3/4 c. applesauce
- 1/3 c. walnuts
- In a large bowl, mix together the sugar, eggs, oil and vanilla. In a separate bowl, mix the flours, baking powder, soda and spices; add them to the wet ingredients in first bowl.
- Mix in oat flakes, applesauce and walnuts.
- Pour mixture into a lightly greased 9 x 5-inch pan.
- Bake in preheated 350u0b0 oven for 40 to 50 minutes, until a toothpick comes out clean.
- Remove bread from oven; cool completely.
