Brown Derby Salad And Dressing Recipe
- 1/2 head iceberg lettuce
- 1/2 bn watercress
- 1 sm bunch curly endive
- 1/2 head romaine lettuce
- 2 Tbsp. chopped chives
- 2 med tomatoes, peeled, seeded and diced
- 1 x chicken breast, cooked, boned, skinned and diced
- 6 x bacon strips, cooked and diced
- 1 x avocado, peeled and diced
- 3 x hard-cooked Large eggs, peeled and diced
- 1/2 c. Roquefort cheese, crumbled
- 1/4 c. water
- 1/4 c. red wine vinegar
- 1/4 tsp sugar
- 1 1/2 tsp lemon juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Worcestershire sauce
- 3/4 tsp dry mustard
- 1/2 x clove garlic, chopped
- 1/4 c. extra virgin olive oil
- 3/4 c. vegetable oil
- Chop lettuce, watercress, endive and romaine in very fine pcs.
- Mix together in a large, wide bowl.
- Arrange chives, tomatoes, chicken, bacon, avocado, Large eggs and cheese in rows over lettuce.
- At the table, pour the special French dressing over salad.
- Toss and serve.
- For the dressing: Combine, water, vinegar, sugar, lemon juice, salt, pepper, Worcestershire, mustard, garlic and oil.
- Chill.
- Shake well before using.
