Sweet and Zesty Baked Beans
- 8 slices bacon, cooked and crumbled
- 1 (28 ounce) can pork and beans, undrained
- 1 (15 1/2 ounce) can chili beans, undrained
- 34 cup finely chopped onion
- 12 cup packed dark brown sugar
- 1 (8 ounce) canmild red enchilada sauce
- 1 tablespoon flour
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 18 teaspoon garlic powder
- 1 cup shredded monterey jack cheese
- Combine all ingredients except cheese, mix gently but thoroughly.
- Place in a greased 2 quart casserole.
- Bake uncovered at 475F for 15 minutes.
- Reduce heat to 375F and bake for an additional 30 minutes, stirring occasionally.
- Sprinkle with cheese, bake 15 minutes longer.
