Pasta a la Yum!
- 6 ounces, weight Angel Hair Pasta
- 1 Tablespoon Olive Oil
- 1 Medium Onion, Diced
- 2 cups Cremini Mushrooms, Sliced
- 3 cloves Fresh Garlic, Minced
- 4 cups Fresh Spinach
- 1 cup Half-and-half
- 2 ounces, weight Crumbled Goat Cheese
- 1/4 cups Grated Parmesan
- Salt And Pepper, to taste
- Cook pasta according to package directions.
- Then drain and set aside.
- Heat a saute pan over medium/high heat and then add the olive oil.
- Once the oil is hot (30 seconds or so), add the onion, mushrooms and garlic.
- Cook until the mushrooms are tender and the onions have softened but are still crisp, approximately 5-7 minutes.
- Add the spinach and cook another 4 to 4 1/2 minutes until the spinach has wilted.
- Add the half-and-half to the pan and turn the heat to high until the mixture just starts to boil.
- Then reduce heat to a simmer and allow the half-and-half to thicken, stirring occasionally, for about 3-5 minutes.
- Mix in the goat cheese and allow it to melt.
- Next, add the Parmesan and stir it into the mixture.
- At this point you are ready to add the pasta.
- Mix in the pasta little by little and fold it into the mixture until combined.
- Add salt and pepper to taste.
- Top with more Parmesan and enjoy!
- Serve with garlic bread and a good glass of wine.
