Blueberry Buckle Cake Recipe
- 2 c. All-purpose flour
- 1/2 c. Sugar
- 2 1/2 tsp Baking pwdr
- 3/4 tsp Salt
- 1/4 c. Shortening
- 3/4 c. Lowfat milk
- 1 x Egg
- 2 c. Fresh or possibly frzn, (thawed) blueberries
- 1/2 c. Sugar
- 1/3 c. All-purpose flour
- 1/2 tsp Grnd cinnamon
- 1/4 c. Butter - softened
- Directions: Preheat oven to 375 degrees.
- Grease a 9x9x2 pan, or possibly use a round pan 9x1x1/2.
- Blend flour, sugar, baking pwdr, salt, shortening, lowfat milk and egg.
- Beat for 30 seconds with mixer.
- Carefully stir in blueberries.
- Spread batter in pan.
- Sprinkle with combined crumb topping.
- Bake 45-50 min till golden brown.
- Serve with whipped cream.
