Greens and Bean with Sausage

  1. Clean and separate escarole.
  2. Gently simmer in water until leaves are wilted.
  3. Drain.
  4. Saute garlic in hot oil about 30 seconds.
  5. Add escarole, turning frequently to coat with garlic and oil.
  6. Add cannelini beans, sausage, salt and pepper, and red pepper.
  7. Simmer gently until heated through.
  8. Serve in soup bowls, and pass the Parmesan.
