Tex-Mex Pork Chops
- 4 boneless pork chops, 1/2 inch thick Safeway 1 lb For $1.99 thru 02/09
- 1/2 tsp. chili powder
- 1/2 tsp. garlic salt
- 2 cans (16 oz. each) pinto beans, drained, rinsed
- 2 cans (11 oz. each) whole kernel corn with sweet peppers, drained
- 2 cans (10 oz. each) diced tomatoes with lime juice and cilantro, drained Safeway 1 lb For $1.29 thru 02/09
- Preheat grill to medium-high heat.
- Center 1 chop on each of four 18x12-inch sheets of heavy-duty foil; sprinkle with chili powder and garlic salt.
- Top evenly with beans, corn and tomatoes.
- Bring up foil sides.
- Double fold top and ends to seal packet, leaving room for heat circulation inside.
- Place packets on grill; cover grill with lid.
- Grill 10 min.
- or until chops are cooked through (160F).
