Coconut Date Nut Quick Bread(Diabetic)
- 2 c. flour
- 2 tsp. baking powder
- salt
- 1/2 tsp. baking soda
- 2 eggs
- 1/4 c. milk
- 3/4 c. thawed, frozen, unsweetened apple juice concentrate
- 1/4 c. margarine, melted
- 2 tsp. vanilla
- cream cheese
- 1/4 c. chopped pecans
- 1/3 c. unsweetened flaked coconut (can be found in health food stores)
- Combine dry ingredients in bowl; set aside.
- Beat eggs in bowl.
- Blend in apple juice, margarine, milk and vanilla.
- Add to dry ingredients, mixing just until moistened.
- Stir in dates, nuts and coconut.
- Spread in greased loaf pan.
- Bake at 350u0b0 for 45 minutes or until pick inserted in center comes out clean.
- Cool 10 minutes in pan.
- Remove.
- Cool. Slice and serve with cream cheese. Makes 12 servings.
