Turkey-Vegetable Sloppy Joes
- 1 tablespoon olive oil
- 1 lb ground turkey (I use frozen, thawed)
- 1 yellow onion, chopped
- 1 carrot, chopped
- 23 cup frozen whole kernel corn
- 23 cup frozen green pea
- 1 (14 1/2 ounce) can no-salt-added diced tomatoes
- 1 (8 ounce) can no-salt-added tomato sauce
- 1 tablespoon white vinegar
- 1 tablespoon fresh lemon juice
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar, packed
- 1 teaspoon dijon-style mustard
- 1 teaspoon ground paprika
- 34 teaspoon salt (or to taste)
- multi-grain hamburger buns or hot dog buns or bread
- Heat a large skillet over medium heat; add olive oil, ground turkey, chopped onion, chopped carrot, and frozen corn and peas.
- Cook until turkey has browned and vegetables are soft, stirring as necessary.
- Mix in canned diced tomatoes, tomato sauce, white vinegar, lemon juice, worcestershire sauce, brown sugar, dijon-style mustard, ground paprika, and salt.
- Reduce heat and simmer (uncovered) until thick, about 30 minutes, stirring occasionally.
- Toast buns or bread, if desired; then top with turkey mixture.
- Serve hot.
