HEALTHY LIVING Beef Stroganoff
- 3 cups yolk-free broad egg noodles, uncooked
- 1/4 cup KRAFT Lite Zesty Italian Dressing, divided
- 1 lb. boneless beef sirloin steak, cut into thin strips Whole Foods 1 lb For $7.99 thru 02/09
- 1 large onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 green pepper, chopped
- 1/2 lb. sliced fresh mushrooms
- 1/2 cup canned beef broth
- 3/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 1 Tbsp. flour
- Cook noodles as directed on package, omitting salt.
- Meanwhile, heat 2 Tbsp.
- dressing in large nonstick skillet on medium-high heat.
- Add meat; cook and stir 2 min.
- Remove from skillet; cover to keep warm.
- Add remaining dressing and onions to skillet; cook and stir 2 min.
- Add peppers and mushrooms; cook 5 min.
- or until onions and peppers are crisp-tender.
- Stir in broth; bring to boil.
- Mix sour cream and flour.
- Add to skillet along with meat; cook 1 min.
- or until meat is done and sauce is thickened, stirring frequently.
- Serve over drained noodles.
