Potato and Mushroom Frittata
- 2 tablespoons oil
- 1 red onion, sliced King Sooper's 1 lb For $0.99 thru 02/09
- 1 red capsicum, cut into 2cm pieces
- 150 g button mushrooms, quartered
- 1/3 cup coarsely chopped parsley
- 6 eggs
- 1 tablespoon VEGEMITE
- 2 potatoes, cut into 2cm cubes and cooked until tender Safeway 2 pkg For $5.00 thru 02/09
- 100 g ham, cut into thick strips
- 1/2 cup grated KRAFT Tasty Cheese
- HEAT the oil in a large non stick frypan and saute the onion and capsicum for 3 minutes or until beginning to colour.
- Add the mushrooms and cook for a further 5 minutes or until the mushrooms are golden.
- Stir in the parsley and cool slightly.
- BEAT together the eggs and VEGEMITE in a large bowl.
- Mix in the mushrooms, potatoes and ham.
- POUR the mixture into a greased 1.5-1.75 litre casserole and sprinkle with cheese.
- Bake in a moderate oven 180 degrees C for 25-30 minutes or until set.
- Serve immediately.
