Potato and Mushroom Frittata

  1. HEAT the oil in a large non stick frypan and saute the onion and capsicum for 3 minutes or until beginning to colour.
  2. Add the mushrooms and cook for a further 5 minutes or until the mushrooms are golden.
  3. Stir in the parsley and cool slightly.
  4. BEAT together the eggs and VEGEMITE in a large bowl.
  5. Mix in the mushrooms, potatoes and ham.
  6. POUR the mixture into a greased 1.5-1.75 litre casserole and sprinkle with cheese.
  7. Bake in a moderate oven 180 degrees C for 25-30 minutes or until set.
  8. Serve immediately.
