Wasabi Deviled Eggs
- 8 Eggs
- 3 tbsp minced green onions
- 1/3 cup mayonnaise
- 2 tsp wasabi paste (add less if its too spicy)
- 2 tsp rice wine vinegar
- 1 sea salt
- 1 (optional) pickled ginger slices
- 1 (optional) fresh pea shoots, for garnish
- 1 paprika ( sprinkle lightly for added color)
- After boiling the eggs (see recipe on boiling the perfect egg.
- ), slice eggs in half length wise.
- Scoop out the yolk, and place in a mixing bowl.
- Mash egg yolks with a fork until smooth.
- Chop green onion measure out mayo, Wasabi paste, vinegar, place into mixing bowl with egg yolks, and mix well.
- Taste to measure the amount of salt to add.
- Sprinkle lightly with paprika, garnish with pea shoots, and ginger slices.
