Beef Filet With Fresh Ground Pepper

  1. Trim any excess fat from fillets if necessary.
  2. Heat butter and olive oil in a skillet.
  3. Dip steaks in pepper and season with salt.
  4. Pan fry in hot butter and oil until cooked as desired, turning to evenly brown both sides.
  5. Add brandy and flambe.
  6. Remove steak from skillet to a serving plate and keep warm.
  7. Add wine and shallots to skillet and saute 5 minutes.
  8. Add stock and butter and cook approximately 2 minutes longer.
  9. Sauce should thicken slightly.
  10. Serve sauce with steak.
