My Original Hand Rolls with Crispy Crunchy Tenkasu
- 180 ml Uncooked white rice
- 2 tbsp Sushi vinegar
- 7 cm Daikon radish
- 2 tbsp Mentsuyu (3x concentrate)
- 5 tbsp Tenkasu - tempura batter crumbs
- 1 Finely julienned Japanese leek (the white part only)
- 1 Nori seaweed, pre-cut for hand rolls
- Mix the ingredients together in a plastic container, cover and leave in the refrigerator for at least an hour to led the flavors soak in.
- Cook the rice to use as sushi rice.
- Mix in the sushi vinegar to make sushi rice.
- Put a little sushi rice on a piece of nori seaweed, Top with lightly drained daikon radish, some tenkasu and shredded white leek and roll it up.
- Done!
