East Meets West Frittata Recipe
- 1 baby bock Choi, rinsed and cut into 1a pieces
- 1 bunch Swiss chard, rinsed and cut into 1a pieces
- A 1/2 onion, thinly sliced
- 1 can quartered artichoke hearts, water packed
- 1 tsp. garlic, thinly sliced
- 2 Tbls virgin olive oil
- Salt, pepper, crushed chili to taste
- 4-6 eggs
- SautA Baby Bock Choi in olive oil with garlic, then sautA Swiss chard.
- Combine all ingredients.
- Spray with non stick spray, a 10a cast iron frying pan, or 1:a deep dish that is 10a in diameter.
- Place ingredients into pan, then add eggs that have been whipped.
- Bake at 350 degrees for 30-35 minutes until firm to the touch in the center.
- Let set for 15 minutes and flip onto a plate, twice, so the original side is up.
