Beef Casserole
- 1 pkg. taco seasoning
- 1 1/2 lb. ground beef
- 1/2 c. bell pepper or to taste
- 1/2 c. onion or to taste
- 1 can whole kernel corn
- 1 can tomato sauce
- 1 can onion rings, split
- grated cheese
- 5 lb. ground meat (about 1/3 each: beef, veal and pork (or use 5 lb. fresh ground turkey breast for reduced fat
- 1 c. bread crumbs
- 3 eggs or equivalent in cholesterol-free egg substitute
- 1/2 c. ketchup (catsup?)
- 1 1/2 c. Bloody Mary Mix (your preference; I like Snap-E-Tom)
- 4 bay leaves, roughly crumbled
- 2 Tbsp. thyme, crumbled
- 1/2 c. finely chopped parsley
- 2 onions, minced (optional)
- salt and freshly cooked pepper
- uncooked bacon strips (can use turkey bacon for low-fat)
- Preheat oven to 325u0b0.
- Mix all ingredients, except bacon, and form into two loaves.
- This is fun!
- (One can be frozen and served later.)
- Place in tureens (if you have them, it makes a nice presentation) or 9-inch loaf pans.
- Lay bacon strips on top to cover and bake for 1 1/4 hours.
- Drain any accumulated fat. (There will be very little if you use the turkey variations.)
- If serving cold, remove bacon and invert loaf; some jelly glaze will appear on the top.
- Each loaf serves 8.
