Irish Soda Bread
- 2 cups (475 ml) sifted all purpose flour
- 1-1/2 tsp (7 ml). baking powder
- 1/2 tsp (2 ml). baking soda
- 1/2 tsp (2 ml). salt
- 1 Tbsp (15 ml). sugar
- 1/4 cup (60 ml) chilled shortening
- 1/2 cup (125 ml) raisins or currants, or more to taste
- 2 tsp (10 ml). caraway seeds
- 1 beaten egg
- 2/3 cup (150 ml) buttermilk
- milk
- Preheat oven to 375 degrees (200 C.).
- Sift flour, baking powder, soda, salt, sugar together in large bowl.
- Cut shortening into flour mixture until it's the consistency of coarse cornmeal.
- Stir in raisins/currents and caraway seeds.
- Mix egg and buttermilk together, add to dry ingredients and stir well.
- Knead briefly and place in a greased 8 inch round pan.
- Press down so dough will fill the pan.
- Cut a bold cross over the top and sides so bread will not crack in baking.
- Brush top with milk.
- Bale 35 to 40 minutes.
