Irish Soda Bread

  1. Preheat oven to 375 degrees (200 C.).
  2. Sift flour, baking powder, soda, salt, sugar together in large bowl.
  3. Cut shortening into flour mixture until it's the consistency of coarse cornmeal.
  4. Stir in raisins/currents and caraway seeds.
  5. Mix egg and buttermilk together, add to dry ingredients and stir well.
  6. Knead briefly and place in a greased 8 inch round pan.
  7. Press down so dough will fill the pan.
  8. Cut a bold cross over the top and sides so bread will not crack in baking.
  9. Brush top with milk.
  10. Bale 35 to 40 minutes.
