Citrus Salad With Goat Cheese
- 14 cup fresh orange juice
- 1 tablespoon white wine vinegar
- 1 shallot, finely chopped
- 12 teaspoon kosher salt
- 14 teaspoon black pepper
- 14 cup extra virgin olive oil
- 3 heads bibb lettuce or 3 heads boston lettuce
- 2 navel oranges, peeled and sliced into thin circles
- 34 cup pecans, toasted and roughly chopped
- 4 ounces goat cheese, crumbled
- In a large bowl, whisk together the orange juice, vinegar, shallot, salt and pepper.
- Whisking constantly, slowly add the oil.
- Add to remaining ingredients and toss to combine.
- You can cover and refrigerate the vinaigrette for several hours prior to tossing with salad ingredients.
