Potato, Dill and Cheddar Pizza
- 1 each pizza shell prepared dough (or pre-baked crust)
- 1/2 pound red skinned potatoes baby, blanched and thinly sliced
- 1/2 cup cheddar cheese shredded
- 1/4 cup dill weed freshly chopped, to serve
- Preheat oven to 425 degrees F.
- Blanch the potatoes in boiling water for about 3 minutes and drain.
- If using uncooked pizza dough, roll or form the dough into a 10 inch by 12 inch oval.
- Alternatively you could use a pre-baked prepared pizza crust from your local market.
- Spread the caramelized onion evenly over the pizza crust.
- Top with thin slices of the blanched potatoes.
- Top with shredded cheddar cheese.
- Bake in the pre-heated oven for about 15 minutes until the cheese is bubbling and starting to brown.
- Just before serving sprinkle the dill weed over the pizza.
