Italian Chip Cake
- 1 lb chocolate sandwich style cookies, crushed
- 12 cup margarine, melted
- 1 34 cups confectioners' sugar
- 1 (12 fluid ounce) can evaporated milk
- 1 cup semi-sweet chocolate chips
- 12 cup margarine (not melted)
- 1 teaspoon vanilla extract
- 12 gallon vanilla ice cream
- 1 12 cups peanut butter chips
- Combine crushed cookies and melted margarine and press in 9x13 dish.
- Chill 1 hour in refrigerator.
- In a saucepan over medium heat, combine confectioners sugar, evaporated milk, chocolate chips and 1/2 cup of margarine.
- Bring to a boil and stir constantly for 8 minute.
- Remove from heat and stir with vanilla.
- Set aside to cool.
- Slice ice cream into 3/4 inch slices and place them in a single layer on top of the crust.
- Sprinkle the peanut butter chips on the slices.
- Place in fridge for 8 hours or overnight.
