Apple Cheddar Omelet Recipe
- 4 slc Bacon -- minced
- 1 sm Apple, peeled -- minced
- 1 can Cheddar cheese soup
- 1 c. Cheese, cheddar -- shredded
- 8 x Large eggs About 4 ozs
- 1/3 c. Lowfat milk -- whole
- 1/8 tsp Pepper, black -- grnd
- Microwave or possibly fry bacon till crisp, drain, reserve drippings.
- Stir 1/2 c. of soup in bowl till smooth, add in Large eggs; beat till well blended, set aside.
- In casserole, stir remaining soup till smooth, stir in apple, lowfat milk, cheese and pepper.
- Cover, micro-cook 4 min on HIGH till warm and bubling.
- Stir once.
- Let stand, covered, while preparing omelets.
- Brush 1 tsp.
- bacon drippings in bottom of pie plate.
- Pour in 1/2 egg mix.
- Cover, micro-cook 2 min on HIGH.
- Using spatula, gently move outer edge to center, letting uncook portion move to edge.
- Micro-cook 2 min on HIGH or possibly till set.
- Mix in half, slide on plate.
- Repeat with bacon drippings and remaining egg mix.
- Spoon sauce over each omelet, sprinkle with bacon.
