Oatmeal Apple Squares
- 1 c. Butter Buds or fat-free margarine
- 1 c. firmly packed brown sugar
- 2 Egg Beaters (1/2 c.)
- 1/3 c. apple juice
- 2 tsp. vanilla
- 1 1/2 c. whole wheat flour
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. nutmeg
- 4 c. quick oats
- 2 c. peeled and diced green apples
- 1/2 c. raisins
- 1 c. sugar, granulated
- Heat oven to 350u0b0.
- Spray Pam on 15 1/2 x 10 1/2 x 1-inch pan. Combine Butter Buds, brown sugar and granulated sugar in a large bowl.
- Beat at medium speed until well blended.
- Beat in Egg Beaters, apple juice and vanilla.
- Combine flour, cinnamon, baking powder, baking soda and nutmeg.
- Mix into creamed mixture at low speed until blended.
- Stir in oats, apples and raisins with a spoon.
- Spread in pan.
- Bake at 350u0b0 for 30 to 35 minutes or until brown and toothpick comes out clean.
- Cool in pan.
- Cut into 2 1/2 x 1 1/2-inch bars.
- Serve warm with cream topping (yields 4 dozen). Can be frozen.
