Louisiana Beans And Rice(Serve As A Side Dish Or In Larger Servings As A Main Dish.)
- 1 Tbsp. vegetable oil
- 1 c. chopped onion
- 1 large green pepper, chopped
- 2 cloves garlic, minced
- 1/2 tsp. dried thyme leaves, crushed
- 1/4 tsp. dried oregano leaves, crushed
- 2 cans (16 oz. each) red beans or pinto beans
- 1 (10 3/4 oz.) can condensed tomato soup
- 1 c. diced cooked ham or smoked sausage
- 1/4 tsp. ground pepper (cayenne)
- hot cooked rice
- In a 2-quart microwave-safe casserole dish, combine oil, onion, green pepper, garlic, thyme and oregano.
- Cover with lid; microwave on High for 5 minutes or until vegetables are tender, stirring once during cooking.
- Stir in beans, soup, ham and red pepper.
- Cover; microwave on High for 5 minutes or until hot. Stir.
- Reduce power to 50%.
- Cover; microwave 15 minutes or until flavors are blended.
- Serve over rice.
- Makes about 5 cups or 5 servings.
