Pan Roasted Salmon with Fava Beans and Roasted Tomatoes

  1. Preheat the oven to 400 degrees.
  2. Season the salmon steak with olive oil and Essence.
  3. In a saute pan, heat 1 tablespoon olive oil.
  4. When the pan is smoking hot, sear the salmon for 2 minutes on each side.
  5. Remove from the heat and place in the oven.
  6. Roast for 8 to 10 minutes for medium-rare.
  7. In a saute pan, heat the remaining olive oil.
  8. When the pan is hot, saute the shallots for 30 seconds.
  9. Add the garlic cloves, fava beans and tomatoes.
  10. Saute for 2 to 3 minutes.
  11. Season with salt and pepper.
  12. Deglaze the pan with the white wine.
  13. Stir in the chopped herbs.
  14. Bring the mixture up to a boil and remove from the heat.
  15. Spoon the fava beans and tomatoes onto the plate.
  16. Place the salmon steak in the center of the sauce.
  17. Garnish with a pile of parsnips, chives and Essence.
  18. Combine all ingredients thoroughly and store in an airtight jar or container.
  19. Yield: about 2/3 cup
