Fruited Cheese Log
- 1 c. chopped whole natural almonds
- 1/3 c. chopped dates
- 1/3 c. golden raisins, chopped
- 1/3 c. dried apricots, chopped
- 1/3 c. dry sherry
- 1 (8 oz.) pkg. cream cheese, softened
- 2 c. shredded Muenster cheese
- 1 Tbsp. Dijon mustard
- 1/2 tsp. seasoned salt
- 1/4 c. chopped parsley
- assorted crackers
- Spread almonds in shallow pan.
- Toast at 350u0b0 for 15 minutes or until lightly browned; cool.
- Combine dates, raisins, apricots and sherry, tossing well to combine; set aside.
- Blend cream cheese, Muenster cheese, mustard and salt; mix well.
- Stir in 1/2 cup almonds and sherry-fruit mixture.
- Turn out onto foil.
- Shape into a log; cover and chill until firm.
- Roll in remaining almonds and parsley before serving.
- Serve with assorted crackers.
- Makes 1 (8-inch) log.
