Fruited Cheese Log

  1. Spread almonds in shallow pan.
  2. Toast at 350u0b0 for 15 minutes or until lightly browned; cool.
  3. Combine dates, raisins, apricots and sherry, tossing well to combine; set aside.
  4. Blend cream cheese, Muenster cheese, mustard and salt; mix well.
  5. Stir in 1/2 cup almonds and sherry-fruit mixture.
  6. Turn out onto foil.
  7. Shape into a log; cover and chill until firm.
  8. Roll in remaining almonds and parsley before serving.
  9. Serve with assorted crackers.
  10. Makes 1 (8-inch) log.
