Ginger Key Lime Bars
- 12 cup gingersnap crumbs
- 12 cup flour
- 14 cup powdered sugar
- 14 lb butter
- 2 eggs
- 1 cup sugar
- 2 teaspoons flour
- 13 cup key lime juice
- 2 tablespoons powdered sugar
- Mix together the crushed ginger snaps,flour, powdered sugar and butter.
- With greasy finger tips, pat dough into an 8X8" pan.
- Bake at 350 for 15 minutes.
- Meanwhile, in a small bowl beat eggs slightly.
- Stir in sugar and flour until well blended.
- Add key lime juice.
- Pour into warmed crust.
- Bake at 350 for 18 minutes.
- Place on rack to cool.
- Place in fridge overnight.
- Cut into triangles and sprinkle with remaining powdered sugar.
