Apple-Walnut Muffins

  1. PREHEAT oven to 425F.
  2. Mix flour, sugar, baking powder and cinnamon in large bowl; set aside.
  3. Beat egg, milk, applesauce and oil in small bowl with wire whisk until well blended.
  4. Stir in cereal; let stand 5 minute.
  5. Add to flour mixture; stir just until moistened.
  6. (Batter will be lumpy.)
  7. Stir in apples and 1/2 the walnuts.
  8. SPOON batter evenly into 12 greased or paper-lined medium muffin cups.
  9. Top with remaining walnuts.
  10. BAKE 20 minute or until toothpick inserted in centers comes out clean.
  11. Cool 5 minute
  12. Note: Wrap individually in plastic wrap, then place in freezer-style resealable plastic bag.
  13. Freeze up to 1 month.
  14. Thaw at room temperature before serving.
