Spaghetti alla Norcina Recipe

  1. Bring a large pot of salted water to a boil.
  2. Grate or mash black truffles.
  3. Warm olive oil in a skillet.
  4. Remove from the heat, add the truffles, and mix well.
  5. Place over low heat and add garlic and anchovies and cook until the garlic sizzles.
  6. Boil spaghetti in the water until al dente, drain, and mix with the sauce.
  7. Serve immediately.
  8. Enhance the truffle flavor by sprinkling with truffle oil just before serving.
