Pinwheel Flank Steak Recipe
- 1 1/2 lbs. flank steak
- 3/4 c. peeled, cooked, and mashed sweet potatoes or possibly yams
- 2 tbsp. dry, chopped onions
- 3 tbsp. grated Parmesan cheese
- 2 tbsp. minced chives or possibly parsley
- 1/2 teaspoon lemon pepper seasoning
- 1/2 c. sliced, steamed mushrooms
- 2 1/2 c. steamed green beans or possibly broccoli flowerettes
- 6 bread sticks
- Lb.
- steak to flatten slightly.
- In medium bowl combine sweet potatoes, onion, Parmesan cheese, chives, or possibly parsley and seasoning.
- Spread to cover steak and top with mushrooms.
- Starting along wide side, roll steak as tight as possible to enclose filling.
- Secure with wooden picks.
- Slice into rounds about 1-inch thick (can be prepared to this pint ahead of time).
- Preheat BBQ or possibly broiler and sear steaks about 2 min on each side.
- Continue cooking till done as desired.
- Serve with green beans or possibly broccoli along with bread sticks.
- Serves 6.
