Some Like It Hot Meat Loaf
- 2 lb. ground meat (beef, part pork or turkey)
- 1 small onion, chopped
- 1 small bell pepper, chopped
- 1 jalapeno pepper, chopped fine (you can use more or less jalapeno, depending on how hot you like it)
- 1 egg
- handful uncooked oats (abut 3/4 to 1 c.)
- 1 1/2 tsp. ground nutmeg
- 1 tsp. ground allspice
- 1 tsp. ground thyme
- 3/4 of 10-ounce can tomato sauce with a few drops Tabasco mixed in (you can use as much Tabasco as you like, or you can leave it out if you want to)
- When mixed well, pick up and toss into bowl a few times to pack mixture together.
- Form into loaf shape in cast-iron skillet which has been sprayed with cooking spray (Pam) and smear remaining tomato sauce/Tabasco over top of meat loaf.
- (I use a skillet so I can make gravy in the same pan after the meat loaf is done.)
- Bake at 350u0b0 for about an hour.
- Look at it now and then and if the pan is dry, add a little water.
- Remove loaf from skillet and allow to cool long enough to make gravy before cutting.
- Mix a little flour into drippings; add milk, stirring constantly, until desired thickness for gravy.
