Savory Stuffed Filet Mignon with Fresh Mozzarella

  1. Insert a knife into the side of each filet, making as large a pocket as possible while being careful not to cut through the other side.
  2. Season inside and out with salt and pepper.
  3. Combine roasted red peppers, olives, diced mozzarella, garlic, and parsley.
  4. Mix well.
  5. Stuff approximately 6 tablespoons mixture into each filet mignon.
  6. Grill for four minutes on one side, then turn.
  7. Place two Bocconcino halves on top of filet.
  8. Grill four more minutes for medium rare.
  9. Yield: 12 Servings.
