Chicken Cordon Bleu
- 4 boneless skinless chicken breasts
- 8 slices bacon
- 8 slices cooked ham
- 4 slices provolone cheese
- 4 slices American cheese
- 2 cups breadcrumbs
- 1 egg
- 1 tablespoon water
- salt and pepper
- 3 tablespoons olive oil
- Preheat oven to 350 degrees.
- Cut chicken breasts down the middle from the side, do not cut all the way through, just to butterfly.
- Pound chicken out until a little bit thinner and more workable.
- Ina mixing bowl, whisk together egg and water.
- Stuff each chicken breast with 2 pieces of ham each and 2 pieces of cheese each.
- Then roll the chicken so that all the meat and cheese stays inside.
- Wrap 2 pieces of bacon around each breast.
- Then, roll each breast around in the egg wash and then roll in the breadcrumbs to coat all the way around.
- Season with salt and pepper.
- Drizzle olive oil in a baking sheet and then place the chicken onto the baking dish.
- Bake at 350 degrees for 20-30 minutes or until cooked thoroughly.
