Easy to Make Russian Tea Cookies

  1. If the jam looks a bit runny, put it in the microwave to evaporate some of the excess moisture off.
  2. It should come out thick enough to spread easily.
  3. Preheat the oven to 170C.
  4. Sift the cake flour.
  5. Grind the tea leaves up in a mill or mortar and pestle.
  6. Add the milk and vegetable oil to a bowl and mix well.
  7. Add the pre-sifted flour to the bowl and mix well again.
  8. Then add the tea.
  9. Mix everything together with a rubber spatula until the mixture comes together.
  10. Add the mixture to a piping bag.
  11. Pipe the mixture out onto a baking tray lined with baking paper.
  12. Bake for 15 minutes in an oven preheated to 180C.
  13. Once baked, cool on a wire rack.
  14. After they've cooled a little, sandwich the cookie halves together with the jam.
  15. You can use whatever jam you like!
  16. Orange jam or milk jams also go well these cookies.
