Easy to Make Russian Tea Cookies
- 90 grams Cake flour
- 30 grams Sugar
- 2 tbsp Vegetable oil
- 2 tbsp Milk
- 1 tsp Tea bags
- 1 Jam
- If the jam looks a bit runny, put it in the microwave to evaporate some of the excess moisture off.
- It should come out thick enough to spread easily.
- Preheat the oven to 170C.
- Sift the cake flour.
- Grind the tea leaves up in a mill or mortar and pestle.
- Add the milk and vegetable oil to a bowl and mix well.
- Add the pre-sifted flour to the bowl and mix well again.
- Then add the tea.
- Mix everything together with a rubber spatula until the mixture comes together.
- Add the mixture to a piping bag.
- Pipe the mixture out onto a baking tray lined with baking paper.
- Bake for 15 minutes in an oven preheated to 180C.
- Once baked, cool on a wire rack.
- After they've cooled a little, sandwich the cookie halves together with the jam.
- You can use whatever jam you like!
- Orange jam or milk jams also go well these cookies.
