Spicy Lemon and Olive Chicken

  1. Rinse chicken well.
  2. In small bowl mix together ginger, tumeric, paprika, salt, and cayenne.
  3. Rub these ingredients into each piece of chicken.
  4. Heat olive oil in deep frying pan and add garlic.
  5. Saute until garlic is almost transparent
  6. Brown chicken on both sides about 5 to 7 minutes.
  7. Remove chicken and drain on a paper towel.
  8. Drain all but 2 tbsp (30 ml) of oil from the pan.
  9. Add onion and cumin, and saute over medium heat.
  10. Mix together broth and tomato paste, and add to frying pan.
  11. Cook paste mix and onions together for 5 minutes.
  12. Add chicken back into pan.
  13. Cover and cook over medium heat for about 30 to 40 minutes.
  14. Remove chicken from pan onto plate.
  15. Add olives and lemon to pan cook for about 5 additional minutes.
  16. Spoon tomato mix over chicken and serve.
