Pasta With Tuna Tomatoes and Capers
- 1 lb vine ripened tomatoes, diced
- salt
- 12 ounces bite size pasta (penne)
- 2 (5 ounce) cans tuna packed in oil, not drained
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 12 cup capers, drained
- 4 ounces crumbled feta cheese, plus extra for topping
- 14 cup fresh basil or 14 cup fresh parsley
- Prepare tomatoes and place in medium bowl.
- Sprinkle lightly with salt.
- Meanwhile boil 1 quarts of water with some salt to cook the pasta.
- Cook partly covered until tender.
- Drain and then return pasta to pot.
- Add Tuna (with the oil), garlic, oregano, capers, feta and basil (or parsley) to tomatoes.
- Toss to coat.
- Add tomato mixture to pasta.
- Toss to coat again.
- Serve with extra feta cheese sprinkled on top.
