Spiced Tofu

  1. Heat oil in a large nonstick skillet over medium heat.
  2. Add onion and garlic.
  3. Cook, stirring frequently, 3 minutes.
  4. Add remaining ingredients, except tofu, to skillet.
  5. Mix well.
  6. Gently stir in tofu.
  7. Cover and reduce heat to medium-low, and cook 30 minutes.
  8. Stir once while cooking.
  9. Serve over cooked couscous, rice or noodles.
