Niratama (egg & chinese chives)
- 1/2 bunch nira (chinese chives) (wash and cut into 3cm pieces)
- 2 beaten eggs
- 2 1/2 tbsp sake
- 2 tsp soy sauce
- 1 tbsp mirin
- 2 tsp sugar
- Combine all seasonings in a saucepan and bring to a simmer.
- (after boiled about 30 sec)
- Add nira, stir and simmer over medium-low heat until cooked.
- (nira is cooked in a flash)
- Pour the beaten egg evenly on surface and cook for 20~30 sec over low heat.
- Cover with a lid and turn off the heat.
- Steam the egg until desired doneness.
