Favorite Meat Loaf(Microwave)
- 1 (8 oz.) can tomato sauce, divided
- 1/4 c. brown sugar
- 1 tsp. mustard
- 2 eggs, lightly beaten
- 1 medium onion, minced
- 1/4 c. cracker crumbs
- 2 lb. lean ground beef
- 1/2 tsp. salt
- 1/4 tsp. pepper
- In small bowl, combine tomato sauce, brown sugar and mustard; set aside.
- In large bowl, combine eggs, onion, crackers, ground beef, salt and pepper.
- Add 1/2 cup tomato sauce mixture; stir thoroughly.
- Place meat mixture in glass ring mold or 2-quart microproof round casserole.
- Put a microproof glass in center of meat mixture, bottom side up.
- Pour remaining tomato sauce over top of meat.
- Cook, uncovered, on High (maximum power) for 12 to 14 minutes.
- Let stand, covered, 5 to 10 minutes before serving. Makes 6 servings.
