Salted Carmel Apple Hand Pies

  1. Whisk together flour, salt, baking powder.
  2. Add cubed butter to the bowl & use fingers to work the butter into the flour mixture is the constistency of wet sand.Stir in sour cream.
  3. ( the dough might be very wet) turn dough out on a well floured surface.
  4. Knead the dough a few times till it comes together.
  5. Add .more flour 1 teaspoon at a time only if it is to sticky.
  6. Roll the dough 8x 10 retangle .
  7. Dust with flour on both sides folding intoThirds.
  8. As folding a letter.
  9. Rotate dough 90 degrees and roll again 8x10 folding into thirds.
  10. Wrap in plastic wrap.
  11. Chill 30 minutes.
  12. MAKE FILLING: In a small bowl combine Apples , lemon juice, sugar, flour, cinnamon.mix together.
  13. Set aside.
  14. Preheat oven to 425 degrees .
  15. Roll dough 14"x14" square.
  16. If dough is hard .
  17. Let warm up a little.Using a 3" cookie cutter or cup.
  18. Cut as many circles as possible.
  19. Reroll dough.
  20. Keep cutting till you run out of dough.
  21. I got enough for 11 pies.
  22. Spoon a small amount of filling in center of each leaving a border.
  23. Top with some chopped caramels.
  24. A pinch of salt.
  25. Crimp with a fork to seal edges.
  26. Brush each pie with egg wash. With a sharp knife cut a couple vents in the top.
  27. Sprinkle with sanding sugar.
  28. Bake pies 15 minutes or until golden brown.
  29. Remove from oven .
  30. Allow to cool a little before serving.
