Chocolate Plunge (Weight Watchers)

  1. Combine half-and-half and corn syrup in heavy medium saucepan and set over medium-high heat.
  2. Bring just to boil, whisking until smooth.
  3. Remove saucepan from heat.
  4. Add chocolate, whisking until melted and smooth.
  5. Return mixture to boil, whisking constantly; boil about 1 minute.
  6. Remove saucepan from heat and whisk in espresso powder and vanilla.
  7. Serve warm or let cool to room temperature.
  8. (If making ahead, transfer to airtight container and refrigerate up to 1 month.
