Chocolate Plunge (Weight Watchers)
- 1 cup fat-free half-and-half
- 2 tablespoons light corn syrup
- 8 ounces bittersweet chocolate, chopped
- 12 teaspoon instant espresso powder
- 12 teaspoon vanilla extract
- assorted fresh and dried fruit
- Combine half-and-half and corn syrup in heavy medium saucepan and set over medium-high heat.
- Bring just to boil, whisking until smooth.
- Remove saucepan from heat.
- Add chocolate, whisking until melted and smooth.
- Return mixture to boil, whisking constantly; boil about 1 minute.
- Remove saucepan from heat and whisk in espresso powder and vanilla.
- Serve warm or let cool to room temperature.
