Newfoundland Partridge Berry Loaf
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1/2 cup margarine
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1 cup milk
- 1 cup raisins
- 1 cup partridge berries
- 1/2 cup chopped nuts
- Prepare 9x5x3 loaf pan by greasing with margarine, lining with aluminum foil, and greasing foil.
- Dust lightly with flour.
- Preheat oven to 350F.
- Combine together 2 cups of flour, 1 tsp.
- baking powder, 1 tsp.
- baking soda, 1 tsp.
- cinnamon, 1 tsp.
- allspice.
- Cream 1/2 cup margarine with 1 cup of sugar.
- Blend in 2 eggs and 1 tsp.
- of vanilla, beating until light and fluffy.
- Add measured dry ingredients to sugar/margarine mixture alternately with one cup of milk.
- (Make 3 dry and 2 liquid additions, combining lightly after each.)
- Fold in raisins, partridge berries, and nuts.
- Pour into prepared pan.
- Bake in oven at 350F for 70 to 75 minutes or until a knitting needle inserted in centre comes out clean.
- Cool 5 minutes, remove from pan, then cool completely .
