Newfoundland Partridge Berry Loaf

  1. Prepare 9x5x3 loaf pan by greasing with margarine, lining with aluminum foil, and greasing foil.
  2. Dust lightly with flour.
  3. Preheat oven to 350F.
  4. Combine together 2 cups of flour, 1 tsp.
  5. baking powder, 1 tsp.
  6. baking soda, 1 tsp.
  7. cinnamon, 1 tsp.
  8. allspice.
  9. Cream 1/2 cup margarine with 1 cup of sugar.
  10. Blend in 2 eggs and 1 tsp.
  11. of vanilla, beating until light and fluffy.
  12. Add measured dry ingredients to sugar/margarine mixture alternately with one cup of milk.
  13. (Make 3 dry and 2 liquid additions, combining lightly after each.)
  14. Fold in raisins, partridge berries, and nuts.
  15. Pour into prepared pan.
  16. Bake in oven at 350F for 70 to 75 minutes or until a knitting needle inserted in centre comes out clean.
  17. Cool 5 minutes, remove from pan, then cool completely .
