Golden Brown Christmas Goose

  1. Sprinkle the goose cavity with salt and pepper.
  2. Place the orange, apple, lemon and prunes in the cavity.
  3. Place the goose breast side up on a rack in a large shallow roasting pan.
  4. prick the skin with a fork.
  5. pour water into the pan.
  6. bake uncovered at 350 degrees for 2 1/2 to 3 hours or until meat thermometer reads 180 degrees.
  7. if necessary drain fa from pan as it accumulatest.
  8. cover goose with foil and let stand for 20 minutes before carving.
  9. discard fruit.
