Golden Brown Christmas Goose
- 1 (10 -12 lb) goose
- 1 teaspoon salt
- 12 teaspoon pepper
- 1 medium navel orange, peeled and quartered
- 1 medium apple, peeled and quartered
- 1 medium lemon, peeled and quartered
- 4 ounces dried prunes
- 1 cup hot water
- Sprinkle the goose cavity with salt and pepper.
- Place the orange, apple, lemon and prunes in the cavity.
- Place the goose breast side up on a rack in a large shallow roasting pan.
- prick the skin with a fork.
- pour water into the pan.
- bake uncovered at 350 degrees for 2 1/2 to 3 hours or until meat thermometer reads 180 degrees.
- if necessary drain fa from pan as it accumulatest.
- cover goose with foil and let stand for 20 minutes before carving.
- discard fruit.
