Couscous with Vegetables
- 100 gr instant couscous
- 1/2 tsp salt
- 1 tsp powder broth (I used chicken, non-MSG kind)
- 1 green capsicum, diced
- 10 cherry tomatoes, halved
- 1 tsp olive oil
- 1/2 tsp dried basil
- 1 tsp oil
- 1 clove garlic, crushed, sliced thinly *
- 4 champignon mushrooms, sliced thinly *
- Using low heat, stir-fry the * ingredients in 1 tsp of oil for about 1 - 2 minutes.
- Set aside.
- Pour boiling water little by little to the couscous.
- Stir.
- After a while, you'll notice the couscous will resemble rice.
- Continue adding water until you think the couscous has absorbed it to the maximum.
- Add the stir-fry, mix well.
- Add the remaining ingredients.
- Enjoy!
