Chicken Tortilla Casserole
- 2-3 whole chicken breast (I have used legs/thighs too)
- 1 onion, chopped
- 1 clove garlic
- 2 c. grated monterrey jack cheese
- 1 pkg. corn tortillas
- 1 small can green chilies
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 soup can water or chicken broth
- Cook chicken in water until tender; cut/shred into bite size pieces.
- Mix onion, chiles, soups, water/broth and garlic together with chicken in saucepan.
- Bring to a boil; then remove from heat. Cut tortillas into 1 inch pie shaped pieces.
- Layer tortillas, chicken soup mixture and cheese alternately in a large casserole; continue with layers ending with cheese.
- Bake for 45 minutes in a 350u0b0 oven uncovered.
- Makes 6-8 servings.
