Vanilla Scented Pears

  1. In a medium saucepan add pear syrup, pear brandy, and vanilla bean.
  2. Turn heat to high and reduce pear syrup to a thick consistency, about 10 minutes.
  3. Reduce to a simmer and add pear slices.
  4. Heat thoroughly.
  5. Remove whole vanilla bean.
  6. Take 2 crepes and spread pudding evenly between them.
  7. Fold crepes into quarters.
  8. Top with pears and syrup.
  9. Serve warm.
